Okra Hailing from Ethiopia this khaki green vegetable was brought to the United States by slaves. The slightly fuzzy exterior of the pods conceal a mucilaginous core embedded with white seeds quite pretty when sliced crosswise into rounds. Best known as an ingredient in Gumbo it may be stewed fried or sauteed preferably with some type of acid. Okra is high in carotene and vitamin C.
Orange Extract A concentrated flavoring made from water and oil of orange dissolved in alcohol. Orange extract is used predominantly to add orange flavor to baked goods without altering the texture.
Orzo A type of pasta resembling rice orzo is the Italian word for barley. It is delicious in soups and salads or as a side dish.
